Ferrous gluconate, the molecular formula is C12H22O14Fe·2H2O, and the relative molecular mass is 482.18. It can be used as a coloring agent and a nutrient fortifier in foods, and can be obtained by neutralizing gluconic acid with reduced iron. The ferrous gluconate is characterized by high bioavailability, good solubility in water, flat flavor and no astringency, and is more intensive in milk beverages, but it is also likely to cause changes in food color and flavor, which limits its application to some extent

Long-term intake at amounts higher than the UL may cause liver damage.
